Calling all chicken recipes

I'm new to Peer Trainer and I'm looking for some new, healthy recipes for boneless chicken breasts. My family is quite picky and doesn't really like stuff that's too different, but I'm willing to try anything. I feel like I keep doing the same thing with chicken all the time. Please share your favorite recipe!

My absolute favorite is to put them in a metal baking pan & liberally sprinkle with my home made curry powder (just a blend of my favorite spices: cumin, turmeric, paprika, garlic powder, onion powder, ground cayenne pepper, ground ginger). You can use store bought curry and add a bit of ground cayenne pepper to it if you like. Or white pepper, or black pepper, whichever your family prefers. Then I bake it uncovered for an hour. Comes out savory & crispy on the outside, moist & juicy on the inside.

Lot of times I cut it in chunks or strips then add to salads. It's also good cut up in rice or noodles. And delicious as a sandwich with lettuce and sliced tomato on a crusty roll with a bit of real mayo.

I put the chicken breasts on the grill, poke them all over with a fork and pour some lemon juice on the side that's up. Then I sprinkle Mrs Dash salt free seasoning (table blend) on it. When I flip them, I poke holes in the cooked side and do the same. It is DELICIOUS and you add very few calories to the chicken by using the lemon juice. Even my kids love it, gives it a good tang!
