Awesome Taco Chili Recipe (Weight Watchers)

I made this recipe from one of my friends who got it at her Weight Watchers meeting. My fiance has requested it twice in the last two weeks! He has no idea it's one of my "lite" recipes.

1 lb. lean ground beef
1 large onion, chopped
1 package taco seasoning
1 package hidden valley ranch mix
1 15 oz. can pinto beans*
1 15 oz. can hot chili beans*
1 15 oz. can whole kernel corn*
1 15 oz. can stewed tomatoes*
1 15 oz. can tomatoes with hot chilies (like Rotel)*

Brown meat and onion, drain. Mix ranch dressing mix and taco seasoning mix into meat. Then, without draining, add all the other ingredients. Simmer 1 hour. Each Cup of chili is equal to 2 points.
* The can sizes are approximate.

I alter this recipe by using boca ground "meat" and the spicy version of all the ingredients I can. But, I like spicy things. I also add a dollop of lite sour cream and a sprinkle of 2% cheese.

This sounds really good! Can anyone comment on the heat index? I have relatively sensitive taste buds in my household!

I plugged this into a recipe analyzer and came up with the following stats based on the recipe providing 8 servings. Using a meat substitute reduces the calories by about 80/serving...:

Total Calories: 430
Calories from Fat: 74
Total Fat: 8.3g (13%)
Saturated Fat: 3.1g (16%)
Cholesterol: 61mg (20%)
Sodium: 363mg (15%)
Total Carbohydrates: 55.6g (19%)
Dietary Fiber: 13.7g (55%)
Sugars: 6.7g
Protein: 35.2g

Great recipe!

I made this Saturday night because it finally got cold outside! It was delicious! Next time I will use the whole pack of taco seasoning, I used 1/2 out of fear of too much taco flavor, but it really needs all of it I think.
