Great reduced fat broccoli casserole recipe

I thought I would share my favorite recipe for brocolli caserole. I used to eat the full fat version because it is awesome, but made it today for the first time in a low fat version. It was pretty awesome. I know if anyone is like me, getting all your veggies in is hard. I like it! You can mix and match it to make as little or as much as you want.

Steam the desired amount of broccoli in the microwave. Drain the excess water. Sprinkle on some fat free cheddar cheese. Crumple up reduced fat Ritz crackers (enough to make a topping). Mix this with I can't believe it's not butter spray (enough to make it kind of damp with butter, but not totally saturated). Sprinkle the cracker mixture on top of the broccoli. Bake at 350 until cheese is melted and crackers are lightly toasted

I'd Make One Little Change

Sounds good, but I would use reduced fat Triscuits because they are whole grain - I tend to want to avoid white flour. Any way I can squeeze more veg in is a good way for me! Thanks for sharing your recipe.

Do they have wheat ritz crackers? I thought I saw some..

The amount of whole grain in the wheat ritz vs. the 100% whole wheat in the rf Triscuits makes me go for Triscuits every time. It's just me. I made a commitment to avoid white flour, so even the wheat ritz aren't in my food arsenal.

all of these sound wonderul. I'm thinking about taking it a step further and using the Campbell's reduced fat cream soup and some brown rice as well to make a broccoli rice casserole. Thanks!
