Dinner Recipes

Does anyone have any yummy somewhat healthy dinner recipes besides a frozen smart ones, chicken or salad? I feel like thas all I eat!!

Quesidila! I love mexican food its yummy and feels like I'm eating something bad. I cook up some vegetables and either lean beef or chicken on the bbq or on the stove, no oil. I warm a whole wheat tortila on the stove, spread on some low fat cheese, fajita seasoning and then some bbq sauce. Fill with the veggies and meat (or just veggies sometimes) and fold. Once its warm and the cheese is all gooie I take it off, cut it into wedges and dip into salsa. Mmmmm I cook these for my boyfriend and he loves them... best part is they are good for you and he can't tell they are diet food!

I also love a fat free hot dog with beans, or whole wheat spaghetti tossed with a little extra virgin olive oil and parmesean.

I have a ton of recipes!!! Just be inventive, thats what I did. :)

there is an awesome healthy version of fettucine at the kraft food website... i cannot remember the website but i go to google and type in kraft food recipes. kraft has a ton of other healthy recipes you may like too! And if you like chicken pot pie, i have a great lighter version for you!
LIGHT CHICKEN POT PIE
1 can of undiluted potato soup
2 cups of cooked skinless boneless chicken breast, chopped
2 cups of frozen mixed veggies (thawed)
1 refrigerated crust
DIRECTIONS:
Heat oven to 400 F
mix soup, chicken, veggies, and any seasonings you may want to add, in a large bowl and place in a 9 in. pie pan
Cover with refrigerated pie crust, trim and flute edges (as you would a pie)
Bake 30-35 min. or until crust is brown and flaky

I make a really similar version of chicken pot pie except I use:

1 can low fat cream of chicken mixed with 'skim royale' (skim milk that purports to tasts like 2%, all i know is that it thickens like it in sauces - bonus!)

Crust is made using low fat Bisquick and skim milk from the bisquick recipe for pot pie.

Makes it lower cal than pre-made pie crust. However the crust is more like a bisquit or dumpling than an actual pie crust.
