OP, I'm sorry to hear about your Mom's illness! I know it's rough on you, but it sounds as if she has made her decision about how to deal with it and live the rest of her life.

As for why... There are many reasons we know, but here's a new one:
I read an interesting article today on the high incidence of breast cancer in developed countries. (I think it was in the NYT) Some scientists are testing the hypothesis that too much light at night encourages breast cancer. What happens is that if someone doesn't sleep in the dark they don't produce as much melatonin. Melatonin breaks down linoleic acid. Linoleic acid encourages the growth of some tumor types.

This hypothesis is still being tested. But the scientists are sure enough of their results so far that one of them takes melatonin pills, and the other one sleeps in a specially darkened room and does not eat any processed food (which has lots of linoleic acid).

Cancer is the Evil That Is Taking Over This Planet

OP I am very sorry to hear about your mother.
Unfortunatly cancer is / can linked to almost everything, the plastic bottles we drink our water from, the plastics we store and microwave our food in, the pesticides used on foods, the preservatives in our food, living too close to high voltage power lines, hormones in milk, mercury in fish, metals in the ground, cell phones, computers, electromagnetic fields, carcinogens from the BBQ and on and on.
