the recipe threads that have gone the best in the past have been ones with very specific themes (like what healthy thing to take to a holiday dinner at the in-laws', especially when they are all picky eaters). Any thoughts on what you'd like the theme of this one to be?

Ideas for themes:
chicken for dinner
tofu recipes
lunch options for bringing to work in tupperware and heating in the microwave
breakfast options that can be made ahead and eaten in at your desk at work
exciting ways to cook veggies as a side dish
low cal/low fat desserts that actually taste good

I guess chicken, beef, or pork recipes for dinner would be good. Like something easy and quick or even for the crockpot

Beef Stew for the crock pot - very easy, and sooo good!
1 package stew meat (usually pre-cut in the beef section)
1 package frozen stew veggies
1 can tomato sauce

Put all 3 in the crock pot and cook on low all day long - add salt and pepper to taste. Soooo good!!

Heres a good pork crock pot recipe:

Pork with Apples and Sauerkraut
1 Pound Boneless Pork Top Loin Chops
1/4 teaspoon Salt
1/4 teaspoon Pepper
1 teaspoon Olive Oil
1 Packet Splenda
3 Medium Golden Delicious Apples, peeled and chopped into small pieces
1/4 teaspoon Cinnamon
1 Cup Sauerkraut*
1/4 teaspoon Caraway Seed

Spray a skillet with non-stick cooking spray. Cook the pork on both sides to brown and then cut into bite size pieces. Spray your crockpot with non-stick cooking spray. Place the pork into the crockpot followed by the salt, pepper, oil, Splenda, apples, cinnamon, sauerkraut and caraway seed. Mix well to combine.
Cover and cook on low for 3 hours or until the apples are tender and the pork is no longer pink.

*Use sauerkraut that comes in a glass jar. The kind in the metal can tends to taste like metal.

Serves: 3 (approx. 1 Cup Each) Per Serving: 265 Calories; 8g Fat (28.8% calories from fat); 28g Protein; 19g Carbohydrate; 5g Dietary Fiber; 68mg Cholesterol; 759mg Sodium. Exchanges: 0 Grain (Starch); 4 Lean Meat; 1/2 Vegetable; 1 Fruit; 1/2 Fat. WWP: 5

Heres a reciepe that I used today for a work potluck:

Take favorite veggies of all types throw them in the crockpot, add some broth (I used vegetarian vegetable broth as our work place has multiple vegetarians and vegans). I added some rice and let it all cook for 4 hours.

Wonderful easy to make vegetable soup. Easy to modify to include something like chicken, tofu or ???

"I am so lazy" dinners (2 versions): (serves 2)

Choose one:
Spray pam on a frying pan
a) spinach messy egg 'fritatta' b) spinach stir fry
-crack 4 eggs -add 1T teriyaki sauce (or cornstarch, honey and soy sauce)
-cook 1 min (low) -add 2 cups chopped spinach
-add2c chopped spinach -add a half cup of bamboo shoot slices
-cook till eggs are desired -chop and add 4 green onions
consistency-stir often -cook up to 4 minutes (should still be a
lovely green color)- stir often
serve with d) or e)



also serve
c) my own home recipe:
Boil water. Add 4 servings of capellini (takes 4 minutes to cook)
Drain, and dump back in pot over low heat
add either
d) one chopped tomato or e) one small tsp of crunch peanut butter
two Tbs goat cheese one tsp chili powder
1 tsp capers 1T soy sauce
1/2 to 1T extra virgin olive oil a few drops of sesame oil

cook 2-3 minutes (or 6 minutes if you like your food piping hot, i suggest added the goat cheese last if you like it that hot)

Serve with a) or b).

YUM!

I'm so lazy dinners- retyped for legibility

Salmon Burgers

Fish is so good for you, and so undereaten!

Fish burgers:
1 can salmon
handful of wheat crackers (or bread crumbs)
egg white (or whole egg depending on your taste)
1/4 c milk (can skip if you like your stuff dryer)
seasonings to taste (Onion, red pepper, black pepper, garlic powder)

Drain salmon and put in a bowl. Note that the bones are all included. If you are feeding kids, you might want to take some out so they don't get picky, but they cook up soft and are a good source of calcium. Also, I like to take the skin off). Mix in egg, crushed crackers, milk, and seasonings. Mix until all is blended. Cook like a hamburger in a tablespoon of Olive Oil (or cooking spray). Make them smaller than burgers because they fall apart - say a little bigger than a hockey puck and about half the thickness.

Salmon Patties/Tuna Patties (burgers, cakes... whatever you want to call them)

I also make salmon patties but sometimes used canned tuna. Same concept. I also add a little bit of light miracle whip for flavor, moisture and zing. I also add celery and fresh onions along with Italian bread crumbs. It makes a huge difference.

Here's my favorite: "Greek" salad
cut all these into similar sized chunks, and in roughly similar amounts, cukes, tomatoes, sweet bell peppers, celery. Add a smaller amount of thinly sliced onion or shallots. sprinkle with olive oil, vinegar, a squeeze of lemon, salt and pepper to taste. Add some reduced fat feta and toss. For the BEST flavor add some chopped FRESH herbs, I especially love basil and parsley in this. (Mint and oregano are great as well. If using dried herbs, just a sprinkle. My whole family loves this and an easy/busy dinner is to serve with grilled chicken or even store-bought roasted chicken. Serve with whole wheat pita and hummus. DYNAMITE and fast.

Vinaigrette

I make a basic vinaigrette with 3 parts good olive oil (or your favorite) to one part vinegar. Add salt , pepper, a pinch of sugar or splenda, a dollop of good dijon mustard. Whisk and serve. Quick and yummy additions include finely chopped shallots, roasted garlic, fresh chopped herbs to your taste. You can make many variations.Have fun and play with different vinegars, spices, etc.

Vinaigrette Variation

I use this basic vinaigrette to make rice and pasta salads in the summertime:
(generally dressings call for a 1 to 3 ratio of vinegar to oil, but I reduce the oil in order to make it a little lighter. If it is too tart for your taste, you can add a tiny substitute a little water for vinegar)

1/3 cup of White Wine vinegar
2/3 c extra virgin olive oi
several teaspoons Dijon mustard (I like to use the smooth rather than grainy)
parsley, salt and fresh black pepper to taste
sometimes I add a little honey

Start with the mustard and olive oil in a bowl. Whisk together. Slowly add the vinegar and whisk until fully incorporated. Add spices.
This is ultra fast and totally emulsifies if you use a blender or food processor

poached salmon

This salmon is so yummy and it is poached in juice so it is nice and flavorful with no extra fat.

Pour any kind of juice (I like a mixture of cranberry and orange) into a pan big enough for a salmon fillet. Juice should be about 2 inches deep. Place salmon (with skin on or it will fall apart!) into the juice and bring to a light simmer. Cook until it turns creamy pink. Very good with a little black pepper, served wth asparagus and brown rice.

Great for the holidays!

TACO DIP
Cover a serving plate with low-fat cream cheese
spread refried beans over it
add shredded cheese, black olives, tomatoes, green onions and any other fresh veggies!
use baked tortilla chips to dip with! This is wonderful!

I take my lunch most days and take one of the two following dishes:

Lentils with tomatos and onions over macaroni
Black beans and rice

Both recipes are easy to make and nutritious. I feel full after eating them yet know I haven't eaten a rotten meal. They're especially good in the winter when you want something hot and filling.
