Need advice for evening eating...

First off, I'm vegan, so please don't recommend chicken!!! ;)
I normally run in the mornings and do some weights in the evenings. This is what my normal menus consist of:
breakfast- 1 1/2 cups oatmeal w/peanut butter, some mixed fruit, vanilla soy milk
lunch-usually vegetarian turkey sandwich or vegetable bouillon soup w/vegetables
snack-fruit, maybe some mixed nuts
I have a tendency to overeat in the evenings-am I not eating enough during the day? I know I'm good with breakfast-I've been eating the same thing for years, and it's kept me satisfied until I eat at lunch (usually 1 pm)-I really want to lose weight, and I'm slowly increasing my running mileage (I used to run 30 mpw; now at 15-20 mpw)
Any help would be greatly appreciated! Thanks!

The days that you eat vegetable bouillion soup with vegetables for lunch and snack on fruits, you're not getting any fats or proteins after breakfast. Those are the two groups that'll keep you more full, far moreso than carbohydrates, and are probably the hardest for you to get, being vegan. Try to add some nuts or peanut butter or tofu, and don't be afraid to cook the tofu in a little bit of vegetable oil to get some fats. If you add some protein/fat to your lunch and/or your snack (or, if you add enough to your lunch, you may be able to eliminate your snack), you shouldn't be so hungry at night. Also, make sure to eat some proteins and fats with your dinner too, to help avoid late-night snacking!

I just started bringing mixed nuts or peanut butter sandwiches to get the protein. Actually, I was planning on having some sort of tofu tonight. It seems when I'm not feeling well, or am tired, I'll just go for the "easy" food and not really concentrate on what I'm eating in the evenings.
