Recipies without a TON of ingredients
I stress out searching for recipies using just the stuff I actually have in my house....any ideas, please post!

Go to www.epicurious.com, which is the web site for Gourmet magazine. They have a section of recipes that use only 5 ingredients. I've found a few dinners that I was able to make w/out going to the store. But it does depend on what is in your pantry/fridge to begin with.

On allrecipes.com, you can do an "ingredient search" where you list ingredients you want in the recipes. this has helped me greatly when trying to determine a plan for dinner! Good luck!

I'm not doing Weight Watchers, but they have a good cookbook called 5 ingredient, 15 minute meals. The recipes I've tried have been great! Rachael Ray has something similar too, but I can't remember the title. You could also search on Amazon.com for 3 ingredient or 5 ingredient recipes and you'll find quite a few options.

Giada Dilaurentis from the food network has a lot of great recipes-and a lot of her ingredients are things you already have in your cabinets (beans, canned tomatoes, chicken stock etc) or spices you probably already have (parsley, basil etc). Her food is simple italian-and while you may be horrified at the amount of cheese she uses in recipes, I cut way way way down and her food still tastes delicious! She has a couple of cookbooks out that are very user friendly. Or you can go to foodnetwork.com and you will find a lot of links to her show and recipes. good luck!

Cooking Light offers a 5 ingredient cookbook. I've made some of the recipes and they are quite good. Actually now that I'm thinking about it, I should pull that out for some ideas for quick weeknight dinners!
On the Cooking Light website, there are several articles - including "Your Lucky Number: 7-Ingredients or Less" and "Six by Six" - that feature recipes with a limited number of ingredients.
There's also a handy option on the website called "The Pantry Chef" (link below). You check off the items you have on hand in your pantry, and it gives you a list of recipes that you can make with those items.

Baked Chimichangas - 4 ingredients!
Ingredients:
8 six-inch flour tortillas
Filling:
1 1/2 cups cooked and cubed chicken (about 3 chicken breasts)
2 oz grated, lowfat cheese
3/4 cup salsa
Preheat oven to 400 degrees. Mix filling ingredients. Warm tortillas until pliable (about 5 seconds each in microwave or nonstick skillet) Wet one side of tortilla and place wet side down. Spoon on filling ingredients. Fold to hold in filling. Spray baking dish with non-stick coating. Lay chimichangas, seam side down, on baking dish. Bake for 15 minutes
Yield: 8 chimichangas (4 servings)
One serving: 2 chimichangas
Calories per serving: 275
Fat 7 grams
Exchanges 2 starches, 2 lean meat
Variations: Divide filling onto four large tortillas. Substitute ground or diced beef, pork, or turkey for chicken.
