recipe for "dummies"

How about five minutes or less, three or four ingredients or less??

Creamy Peppered Chicken

1 container of sour cream, reduced fat or fat free
4 chicken breasts, seasoned per your preference.

Brown the chicken in an electric skillet. I just use PAM spray or a bit of organic butter. When the chicken is mostly cooked add sour cream and stir until you have a gravy.

Serve with potatoes, noodles or rice. Delicious and done in minutes.

Garbanzo Beans

  • open a can of garbanzo beans, drain. rinse. pat dry between kitchen towels. set aside.
  • 3 cloves of fresh garlic, peeled. minced, diced, pressed, however you like. toss on top of beans.
  • add olive oil. mix well so that the olive oil and garlic fully cover the garbanzo beans. add a little sea salt or not. serve.


these are ridiculously simple, and are always gone at parties and potlucks. I never have leftovers.

you can also add these to steamed vegetable bowls.

oh, forgot to add... you can also "CRUSH" the chopped/minced garlic before adding to the garbanzo beans and before olive oil. crushing the garlic makes it absolutely divine!

just lay the garlic on a tray and get a rolling pin, add the garbanzo beans, olive oil, and salt if you like. mix. then transfer to serving bowl.

it's a party favorite! ;)

Savory Kale

  • In a large frying pan or skillet, lightly sauté (in either water or olive oil) sliced/diced onions (maybe a quarter cup, or a very small handful) until translucent.
  • Add 1 to 3 minced/diced or pressed garlic cloves and sauté an additional minute.
  • Add as much freshly washed and chopped kale that can fit in the pan, pile it on high! It will shrink down (I remove the tough center & bottom from kale leaves, then I roll them up and cut them into thin slices. But do it however you like!) and sauté down until softly wilted.

Serve alone and garnish with salt & pepper, kimchi, red chile flake, or any other condiment you like. I like my kale cooked and savory.

You can also add those garlic garbanzo beans to this!

sweet and spicy tofu

tofu - extra firm
can of pineapple chunks in natural juice.
sweetener- i used coconut sugar.
red chilli flakes- the spice
flour or cornstarch

1. rinse and drain tofu pat dry get all moisture out of it.-cut into triangles dredge in flour or cornstarch saute in oil.. set aside.
2. pour pineapple juice in the same pan. add coconut sugar..stir to combine sprinkle with chilli flakes.
3.add pineapple chinks into pan let it caramelize..
4. add the sauteed triangle tofu back into the mixture and toss.sprinkle with sea salt. and serve

serve over veggies, greens, quinoa
