real easy and fast recipes Eat to Live plan

Hi, won't get home till almost 730 tonight and want to stay on my new Eat for Health program plan, so I need a fast, easy recipe for dinner. Any suggestions? thanks

bag of greens, can of beans. five cloves garlic, some oil. Put the oil in the pan, cook up the crushed garlic. Add the greens, cover the pan and steam for a couple minutes. Add the beans and whatever flavor. Instant, cheap and tasty....

thai curry

I LOVE the PT Energy Soup!!! I eat it almost every day for a afternoon snack.

Another quick idea might be a thai curry:
- heat up red curry paste (ready-made from asia shop) and coconut milk in a wok
- chop up garlic, broccoli, red peppers, mushrooms, carrot, eggplants, whatever veggie you like and add them to the wok
- cook until the veggies are smooth
- you can eat some rice aside or just have it plain
