Tasty Dessert

This is from Dr. Phil's cookbook, which has lots of tasty, practical recipes...

MOCHA FUDGE PUDDING
1/2 (12.3 ounce) package silken extra-firm light tofu
2 Cups fat-free milk
1/4 cup fat-free powdered dry milk
1 Tbsp instant espresso or coffee powder (I use instant coffee)
1 (1.4 ounce) package sugar-free, fat-free instant chocolate pudding mix
Non-fat, sugar-free vanilla frozen yogurt, optional (I don't ever use this)
Fresh fruit, such as cherries, strawberries, or raspberries, optional

1. Place the tofu, milk, powdered dry milk, and instant coffee in a blender or a food processor fitted with the chopping blade and blend or process until smooth and creamy, about 30 seconds. Add the pudding mix and blend or process until somewhat thickened, about 20 seconds.

2. Transfer the mixture to four 1-cup ramekins or serving cups and refrigerate at least 2 hours before serving. The pudding can be made in advance and kept, tightly covered, in the refrigerator, up to 3 days.

3. If you'd like to "gild the lily", you can top the puddings with a dollop of non-fat, sugar-free vanilla yogurt and garnish them with fresh fruit. (FF whipped topping is a tasty option)

Oh my gosh, I LOVE this recipe! I've even made it for company and they would have never known there was tofu in there except for me telling them. It's a great way to "try" tofu.

When Dr Phil's cookbook first came out, I used this recipe religiously, sometimes using white chocolate flavored pudding. Since I couldn't find light extra firm silken tofu anywhere, I used regular firm silken tofu. Since I couldn't find instant espresso powder, I left it out. And, since Wal-Mart quit carrying silken tofu, I quit using this recipe. But, I recently found the espresso powder at a Whole Foods Market and, day before yesterday, I found light extra firm silken tofu, at an Earth Fare store! I'm looking forward to using it!

As much as this does sound delicious, isnt just using a package of fat free sugar free pudding (and making it as is) a lower calorie option?
