Breakfast?

Okay - talking fresh food here - no protein shakes, :<) , anyone have any great ideas/recipes for breakfast?

2 egg whites, 1 egg with mushrooms. 2 peices of canadian bacon. fruit or high fiber bread.

smoked salmon with tomato, capers on bread/crackers.
peanut butter or almond butter on a slice of whole wheat. 1/2 a cantelope.
1 egg, 2 egg whites with turkey bacon and an israeli salad (chopped tomato and cucumber). slice of bread if you're still hungry.

Granola Fruit Kabobs

(This recipe yields 4 servings)
* 2 cups granola
* 2 medium apples -- chunked
* 2 medium bananas -- chunked
* 1 cup fresh pineapple chunks
* 1 cup vanilla or fruit flavored yogurt

Place granola in shallow bowl. Toss fruit with a small amount of lemon juice to deter browning. Insert toothpicks into each piece of fruit. To serve, dip fruit in yogurt, coat all sides. Roll in granola.

Strawberry and Cream Cheese Filled Muffins

(12 servings)

* 1/4 cup reduced fat cream cheese
* 2 tablespoons strawberry preserves
* 2 1/4 cups flour
* 1/3 cup sugar
* 2 teaspoons baking powder
* 2 teaspoons poppy seeds
* 1/2 teaspoon baking soda
* 1/4 teaspoon salt
* 1 1/4 cups low-fat buttermilk
* 3 tablespoons vegetable oil
* 2 large egg whites
* 1 large egg

Preheat oven to 375°.

Combine the cream cheese and preserves; stir with a whisk.

Lightly spoon flour into dry measuring cups; level with a knife. Combine flour, sugar, baking powder, poppy seeds, baking soda and salt in a medium bowl; make a well in center of mixture. Combine buttermilk, oil, egg whites, and egg; stir well with a whisk. Add to flour mixture, stirring just until moist.

Spoon the batter into 12 muffin cups coated with
cooking spray, filling one-third full. Top each with about 1 teaspoon cream cheese mixture, divide the remaining batter evenly over the cream cheese mixture.

Bake at 375° for 25 minutes or until muffins spring back when touched lightly in center. Remove the muffins from pans immediately, and place on a wire rack.

Upside-Down Spinach Pie

(4 servings)

* 1 pkg. (10 oz.) frozen chopped spinach -- thawed and well drained
* 1/2 cup shredded low sodium Swiss cheese (about 2 oz.)
* 1/4 cup chopped onion
* 1/2 cup Cream Of Rice Cereal -- uncooked
* 1-1/2 tsp. Baking Powder
* 1-1/2 cups fat free milk
* 3/4 cup cholesterol-free egg product
* 2 Tbsp. margarine or butter -- melted

Mix spinach, cheese and onion in bottom of greased 9-inch pie plate; set aside.

Blend cereal and baking powder in medium bowl; stir in milk, egg product and margarine. Pour over spinach mixture.

Bake at 400°F for 30 minutes or until puffed and golden. Cut into wedges to serve; garnish as desired.

Frittatas

Google a recipe -

Make a veggie frittata with only 2 whole eggs, the rest whites. Veggies and a bit of feta cheese. One quarter will only be about 15-200 calories and that's full of fiber and protein and...flavor! Easy to throw in a mini whole wheat pita and eat on the run.

put some walnuts or almonds in the blender. Grind them up. Add a little fruit juice (NSA, no glucose either!!!) Then add a banana and frozen berries. Fruit servings for a day, and protien to prevent a sugar crash. Fresh and all natural.
