What Are Acrylamides? Why is fried and bbq'd food so bad?

"Acrylamides are some of the most potent known cancer-causing agents. While the European Union has strict regulations that limit the amount of these compounds in food, the United States has no such restrictions."

Where are they found?

"Recent studies have clearly demonstrated that acrylamide forms as a byproduct in foods when they are fried, baked, roasted, grilled, or barbequed. Steamed or boiled foods, on the other hand, do not contain these compounds. Deep fried foods, in particular high carbohydrate foods such as fries and potato chips, have been shown to have the highest levels of acrylamides."

I've always known fried foods had all that fat, and I kind of heard about the bbq being bad, but what I didn't know was that this stuff is in the breakfast cereal:

"In fact, many foods that children regularly consume contain high amounts of acrylamides-for example, processed breakfast cereals, both sweetened and unsweetened types.

I heard something about a couple of chemicals like you spoke of and things in Make-Up that are illegal in other countries but are legal here. It's scary how these things add up over time. Have you googled this?
