Question about number of sets in weight training

I have been training with free weights (in addition to a low calorie diet) for a little over a month. I am doing a split routine, with 2 or 3 exercises for each body part, 3 sets of each. When I get to where I can do 3 sets of 12 reps in an exercise, I add more weight the next training day. The only problem I am having is the amount of time I am spending exercising each day. I am an artist, and with shows deadlines coming up, the time is a concern. My question is about an article I read the other day saying that if you do just one set of each exercise - until you have gone to the point of not being able to do any more reps in good form - you will get the same benefits of doing 3 sets. Is this true? (If so, it would save me a lot of time, but I don't want to cut back on the number of sets if it is going to cut back on my progress) Please let me know what you all think.
