Too much or just enough?

I have been walking for 7 weeks now. I started at 3 miles three times a week and 1.5 miles twice a week. Then I upped it to three miles 5 days a week with a break on weekends. Now I am doing three miles everyday and bike riding some on the weekends with a little walking to the park. I dont know how far that is and really dont care about that. I decided to add a trip to the YMCA during the afternoon to help my metabolism burn more throughout the day. So, I do the 3 mile walk, takes an hour, in the AM. Then I go to the YMCA around noon and do 45 minutes on the elliptical, which is 3.15 miles, and then walk for 30 minutes, 1.5 miles, for a cool down. I just started that this week. My issue is I have a way to go, I weigh 257, down 11 pounds in 28 days, and dont want to get stuck with nowhere to go. So, today I just did the 3 mile walk in the AM. Should I go back to the Y, only do it twice a week, or stick with the 3 mile walk in the AM, and slowly add more walking or a combo of all. I havent hit a plateau but if I do I really wont have anywhere to go if I do it all now, KWIM. So, what do you all suggest?
