Eat to Live dinner advise? Please help!
Hi Everyone. I always get great ideas from the people here, so I'm hoping someone can help me out!
I'm trying to follow Eat to Live as closely as I can. My hectic life doesn't allow me to follow it 100%, but I'm trying.
My problem is with dinner. I have a crazy busy life, I leave my house at 6 am, and I don't get home until 9pm. When I get home, I have one hour to do everything that needs doing at home, cleaning, packing tomorrows lunch, gym clothes, school books, finding a few mins to relax and do nothing before bed, and get dinner together. I have zero time or energy to do anything for dinner this late in my day, so often I end up eating something fast and not super healthy.
Breakfast and Lunch are fine, I have a huge green smoothy for breakfast, for lunch it's a huge salad, really really huge, like 1 lb of veggies, but dinner is my weak point.
The ideal dinner would be something easy to pack and that does not require a microwave or oven, so I could eat it at dinner time, when I'm usually taking a 45 min subway ride, instead of 30 mins before bed when I get home at night. I though about another salad but after my huge lunch salad I'm really not in the mood for another one for dinner.
Any solutions or ideas?
