Ways to change your child's eating habits?

I'm looking for ways to help my 7 year old son learn about the importance of eating a variety of foods. I take full responsibility for his diet today: cereal, pb&j, grilled cheese, chicken nuggets, etc with a few apples or raisins thrown in. It was always just easier to give him what he would eat than to struggle with adding more foods to his diet. Today, he is healthy and slim, but I want to help him focus on whole fruits and vegetables so that he can enjoy a lifetime of good health. One big change I plan to make for our family is to have dinner together on a regular basis. This means changing my schedule and my husband's schedule. I hope to have at least 5 dinners each week together by 2011. Does anyone have any other suggestions? He is an avid reader, so any books appropriate for school age would be helpful.
