How do you stop "dieting"?

I went shopping today and discovered I am now a size 7. *Gasp! Cheer!*

I like that. At 5'7" in height, I think a size 7 is pretty good.

So here's the question. I've been cutting back, and exercising and counting calories for so long now, how do I stop? Without gaining the weight back that is.

Obviously I can't just go back to doing what I was doing before I started eating healthy and the like. Most days I manage to limit myself to less than 1500 calories EASILY, and I ENJOY my exercising routine, and have no plan to stop that part. However, at 24 years old, 5'7", moderately active Female, 1500 calories is no where near enough to maintain my current weight. And the last thing I want to do is start having the opposite problem of weighing too little.

So, how do a start eating more? Should I eat more? Even if I don't feel all that hungry? What do I do?
