Good Recipes with nutritional info

I modified a recipe I found yesterday. I want to share it. It's very versatile and YUMMY!

Clari's Italian Chicken Vegetable Zuppa

Carbohydrates: 29.1g
Calories: 162.1
Protein: 6.1g
Ingredients

1 T. Olive Oil
1 cup Carrots, small dice (about 1.5 carrots)
1 cup Onions, small dice (about .5 large)
1 cup Celery, small dice (about 2 stalks)
3 Garlic cloves, minced
1 cup Potato, inch cubes
3/4 cup Kale, chopped
1/3 cup Broccoli, chopped
1/4 fresh black pepper
1/2 tsp red pepper flakes
1 tsp Italian seasoning
9 cups chicken broth, low salt (homemade preferred)
1 1/2 cups Zucchini, large dice
1 cup Green Beans, 1 inch lengths
1 large Tomato or 2 small, seeded and chopped
4 oz. Pasta (Ditalini, Elbows or other small preferred)
Directions

This makes 6 2-cup servings.

Heat olive oil in large pan, add carrots, onion, and celery and cook over medium heat for 5 minutes. Add garlic and saute for another 2 minutes.

Add potatoes, kale, broccoli and seasonings; cook for 3 minutes.

Add broth, zucchini, green beans, pasta and tomatoes. Cook until pasta is cooked (check box for cooking time), 8-12 minutes.
Check seasoning. Add salt and pepper if needed.

*Garnish with grated cheese, sliced cheese, olive oil, herbs, chicken meat, even frozen meatballs as desired. Garnish calories are not included.
