Help! Easter Dessert Recipes...

I absolutely love to bake and would like to take something to my family on Easter for dessert. But, I want to bake something somewhat healthy or light since the dinner itself may be overloaded with fat and calories (Ham & scallop potatoes, etc.).

Anyone have any great recipes I could make? I am open to all suggestions and may even have time to bake something healthy and something a little more indulgent for the rest of the family.

How about a Jello mold with lots of pretty colors? You do this by pouring in some jello of one flavor into the mold, refrigerating untl firm, and then repeating wtih another color, over and over, until the mold is full. It's then layered with pretty colors and very festive!

You can even find cute easter candies (bunny-shaped, etc.) and drop some in between the layers - then you'll have floating bunnies in your jello!

If you use the sugar-free jello, there are almost no calories! If people don't like artificial sweeteners, the regular kind isn't as bad for you as most desserts anyway. And, it'll look festive and cute. The kids will love it!

If you're a good cook, you could try making something like an angel food cake with a bit of food coloring, so it's pink or blue or green or something pastel-y, and then bring cool whip and strawberries to go on top. Light and yummy!

Here is a light cheesecake that could be modified...

Cheater’s Cheesecake


Crust

2 cups crushed graham crackers

1 stick margarine, melted

Mix together and press into the bottom of a 9x13 pan


Filling

8 oz package of cream cheese

¾ cup sugar

8 oz container cool whip

Mix together and smooth on top of crust

Top with cherry pie filling

Keep in fridge

This is super light and refreshing.. Use any kind of jello.

JELLO POKE CAKE

1 white cake mix
1 (3 oz.) pkg. Jello
1 c. boiling water
1/2 c. cold water
Cool Whip

Prepare cake as directed in an oblong cake pan. Cool pan 15 minutes. Poke cake with fork for small holes, or handle of wooden spoon for larger holes, every 1/2 to 1 inch. Dissolve Jello in boiling water. Add cold water. Spoon over the cake slowly so the Jello mixture soaks into the holes. Chill 3 to 4 hours. Top with Cool Whip.

Strawberry Angel Food Trifle

This is one of my favorite lite desserts!

4 cups cubed angel food cake
1- 8 oz box sugar free strawberry jello
1- lg. pkg vanilla pudding, sugar free
1/2 of 8 oz. container Cool Whip Lite
2 cups sliced strawberries

Make pudding as directed and just before you assemble fold together the pudding and Cool Whip. In a pretty glass bowl layer trifle. Alternate several layers of cubed cake and strawberries.

Mix jello with 2 cups hot water. Pour over cake and berries. Cool.
Next pour pudding, cool whip mix over the trifle and garnish with a few strawberries. It's very pretty and best served after completely cooled or the next day.
Makes 12 1 cup servings 3.5 points each
