My Sweet tooth fix. . . . djdirito's brownie bites

Here is a recipe I came up with when I was reading about how good cocoa is for you. (doesn't hurt that I like the flavor of chocolate)

This is vegan and raw.

In a food processor chop until very fine 1/2c raw cashews

add 5 Tblsp unsweetened cocoa powder (mix together)

add 6 pitted soft Medjool dates (chop together)

add 2 tsp pure vanilla extract

Pulse processor adding a little water until the "dough" just comes together and forms a ball. You want this to be moist, not slimy or pasty. The amount of water will vary depending on the size and moistness of the dates you use. I seek out the very moist, largest ones. Medjool dates are the key here, not the dried baking dates you normally find near the candied friut at Christmas! I get mine at Sam's club though I know that they are not too hard to find - you may have a tougher time finding the raw cashews.

Scoop and roll into grape sized balls. I like to roll them in cocoa powder (like a truffle). it is also very good rolled in some chopped raw cashews that you toast in a skillet prior to using. (although this process no longer lets them qualify as "raw")

Another variiation I have tried included adding 1 tsp orange extract (for that chocolate/orange flavor combo)

I have also added 1/4 tsp of cayanne powder for a bit of heat in the background

These are very good and very rich, so usually one or two will more than satisfy that craving. I did the calorie work up on them and I think they were ~23 calories each (I have since thrown away my notes on it . . . .whoops!)

I hope you try these and enjoy them - think of other chocolate flavor combos you like, I'm sure there are other good ones out there! Good luck!
