EDEN Organic Black Beans Phaseolus vulgaris are organically grown in nutrient rich, vital soil, by USA family farmers who are committed to a clean environment and the safest, most nutritious, appealing food.
EDEN Organic Black Beans are washed, soaked overnight and expertly cooked at Eden's certified organic, circle K kosher cannery with purified water and a bit of kombu sea vegetable, that naturally enhances their flavor. No salt added.

In 1999 EDEN Organic Beans received the highest ranking, for the second time, in comparisons of brands by the Center for Science in the Public Interest (CSPI) in their Nutrition Action Healthletter. Every flavor of EDEN Beans was recognized as having superior nutrition including fiber and sodium, and the authors gave a special mention to Eden's "delicious ? healthy seasoned beans that you can eat straight out of the can." Again, in 2004 EDEN Organic Beans received the highest ranking for flavor and nourishment in an exhaustive comparison studies of canned beans in the Nutrition Action Healthletter, rating EDEN Organic Refried Beans as 'Best Buy' and number one for nutrition among 38 brands with salt added. CSPI's expert panel consistently praised EDEN's great flavor, high fiber, low fat, and low sodium. In 2004 our beans also rated favorites by Men's Health and Child magazines.

According to the FDA, "Low fat diets rich in fruits and vegetables (foods that are low in fat and may contain dietary fiber, Vitamin A, or Vitamin C) may reduce the risk of some types of cancer, a disease associated with many factors. EDEN Organic Black Beans are low fat and an excellent source of dietary fiber." Also, "Diets low in sodium may reduce the risk of high blood pressure, a disease associated with many factors." EDEN Organic Black Beans are very low in sodium with no salt added. They are also a good source of protein, iron, phosphorus, and magnesium.

Commercial canners put chemicals in with beans to harden the skins so that they won?t fall apart in the can as they cook. They also add a chemical to hold the color. Most are loaded with refined sugar, refined salt, and may contain dyes, and chemical preservatives. EDEN Organic Black Beans contain none of these additives. They are grown in living soil, free of pesticides, herbicides, and chemical fertilizers for decades. Because of the vital soil that produces them, their much higher mineral content and stronger skins allow them to be cooked without need of processing chemicals, and their vibrant colors hold fast. Our cannery, Meridian Foods, located in East central Indiana has a long standing reputation for putting out cooked canned beans of a better quality, fill, and finish than any other cannery in the United States.

Over 600 known carotenoids (plant color pigments) are recognized as antioxidants. Recent research found black bean antioxidants to be equal to that of fruits. "Beans are really loaded with antioxidant compounds. We didn't know how potent they were until now. In general darker colored seed coats were associated with higher levels of flavonoids, and therefore higher antioxidant activity," said Clifford Beninger, the leading researcher and a plant breeder at Michigan State University and a former researcher for the USDA's Sugarbeet and Bean Research Unit. The researchers tested the antioxidant activity of flavonoids found in the 12 common varieties of dry beans. They found that one class of compounds in particular, anthocyanins, were the most active antioxidants in beans. Beninger found that the levels of anthocyanins per 100 gram serving of black beans was 10 times the amount of overall antioxidants in an equivalent serving of oranges and similar to that found in grapes, apples, and cranberries. Black beans were found to have more antioxidant activity, gram for gram, than other beans. The study was published in the December 2003 issue of the Journal of Agricultural and Food Chemistry.
