Salmon Salad
Ingredients
• 1¼ medium apples
• ¼ cup celery
• ¼ cup cucumber
• 1 tsp lemon juice
• 1 cup lettuce, iceberg
• ½ tsp oil, safflower
• ¼ cup onion
• 3¼ oz salmon, cooked
• 1 Tbl yogurt, lowfat-plain
Side Dish
• ½ medium orange
Preparation:
Peel orange(s) and set aside.
Dice apple and vegetables and mix
with remaining ingredients (except
lettuce) and seasonings.
Serve on top of lettuce and enjoy
oranges on the side.

Why is the fiber lower than what the nutritional information says?
Weight Watchers modified the point system plan, where you can only count 4 grams of fiber for any food item, and the rest is ignored. This modification was because people were abusing it and eating high fiber foods in order to make the points seem lower.
