• ¼ cup bell pepperIn a large saucepan, combine
• ¼ cup carrots minced onion, vegetable stock, diced
• 1 cup chick/vegie stocktomato, sliced carrots, and chopped
• 1 Tbl corn kernels, boiledcelery. Bring to a boil and simmer for
• ¼ cup eggplant10 minutes.
• ¼ cup okra
• ½ cup onion
• ¼ cup squash, yellow
• 10 oz tofu, extra firm
• ¼ medium tomato
• 1 tsp garlic
• 1 tsp oil, high oleic safflower
Spices / Flavoring
• ¼ tsp salt, lite
• ¼ tsp parsley, dried
• ¼ tsp paprika
• ¼ tsp dried basil
• 1 tsp tabasco sauce
Preparation:
In a large saucepan, combine minced onion, vegetable stock, diced tomato, sliced carrots, and chopped celery. Bring to a boil and simmer for 10 minutes.
Chop the okra, bell pepper, eggplant,
and squash. Add to the saucepan
along with corn, garlic, and
seasonings, to taste. Continue
simmering for another 10 mintues.
Cube the tofu and add to saucepan.
Simmer an addtional 5 minutes.

Why is the fiber lower than what the nutritional information says?
Weight Watchers modified the point system plan, where you can only count 4 grams of fiber for any food item, and the rest is ignored. This modification was because people were abusing it and eating high fiber foods in order to make the points seem lower.
