California Salad
Ingredients
• ½ tsp oil, almond
• ½ Tbl avocado
• ¼ cup bean sprouts
• ¼ cup garbanzo beans
• ½ high fiber cracker
• ¼ cup cucumber
• 2 tsp lemon juice
• ½ cup lettuce, romaine
• ¼ medium tomato
• 2 tsp vinegar, red wine
• 5 egg whites
• 1 Tbl yogurt, nonfat-plain
• ½ slice onion, red
Spices / Flavoring
• ¼ tsp salt, lite
• ¼ tsp black pepper
• ¼ tsp parsley, dried
• ¼ tsp dried basil
Preparation:
Set cracker(s) aside.
Hard boil eggs and set aside to cool.
Remove eggs from shell, slice in half
and discard egg yolks.
Combine yogurt, oil, vinegar, lemon
juice and seasonings to make
a
dressing.
Chop vegetables and combine with
remaining ingredients.
Serve hard boiled eggs on side or
slice and place on top of salad.
Drizzle dressing on top of salad and
enjoy with crackers on the side.

Why is the fiber lower than what the nutritional information says?
Weight Watchers modified the point system plan, where you can only count 4 grams of fiber for any food item, and the rest is ignored. This modification was because people were abusing it and eating high fiber foods in order to make the points seem lower.
