Chicken Salad
Ingredients
• ½ cup bell pepper
• ¼ cup celery
• 1¾ oz chicken, broiled
• 2 tsp lemon juice
• 1 cup lettuce, romaine
• 2 tsp mustard, dijon
• 1 tsp oil, canola
• ¼ cup pasta
• ½ medium tomato
• 2 tsp vinegar, red wine
• 2 Tbls yogurt, nonfat-plain
• 1 slice onion, red
Spices / Flavoring
• ¼ tsp salt, lite
• ¼ tsp black pepper
• ¼ tsp dried dill
Preparation:
Cook pasta, drain, and set aside.
Combine mustard, yogurt, vinegar,
lemon juice, dill, salt and pepper to
make a dressing.
Chop vegetables and toss with
chicken, pasta, dressing and lettuce.
