Cinnamon-Apple Crisp Crepes

4 | Granny Smith apples, peeled, cored and diced | 3/4 | cup raisins | 1/3 | cup packed brown sugar | 1/4 | cup water | 1 | lemon, zest and juice | 1/2 | teaspoon cinnamon | 8 | sweet batter crepes (see sweet batter recipe) | 1 | cup low-fat granola |

Directions |

Combine first six ingredients in a medium saucepan. Simmer over medium heat 5 minutes, until apples are tender and liquid is reduced. Arrange crepes on a flat surface. Top with apple mixture and granola. Roll up and serve. |
