Description:

Ingredients
1/2cup ReaLemon juice
1/2teaspoon ground cumin
2tablespoons olive oil
4thinly sliced scallions (white part only)
2cups sliecd cucumber
1pint cherry tomatoes
2cups cooked chickpeas
1/2cup chopped flat-leaf parsley
1/2cup chopped mint
1bag pre-washed spinach
26-inch toasted pitas, broken into bite-size pieces
Salt and pepper to taste
Directions

In a large salad bowl, whisk together lemon juice, salt, cumin and oil. Add scallions, cucumbers, cherry tomatoes, chickpeas, parsley and mint. Toss to combine. Add spinach and pita chips. Toss again; salt and pepper to taste. Serve immediately.
