This is my "healthy" version of zucchini bread: It is made wtih some whole wheat flour, and yogurt instead of oil. The chocolate chips & coconut do deviate from my original quest of good for you~3 eggs, well beaten
1 1/3 cup splenda
3 tsp vanilla
1 c yogurt
2 cups shredded zucchini
1 1/2 c flour
1 1/2 c whole wheat flour
1/2 tsp baking powder
1 tsp salt
1 tsp soda
1 tsp cinnamon
1 cup coconut
1 cup choc chips
Beat eggs until light and fluffy. Add sugar, vanilla, and yogurt. Blend well. Stir in zucchini. Sift together flour, baking powder, salt, soda and cinnamon. Blend with egg mixture. Fold in chocolate chips adn coconut. Turn into 2 greased 9x5 loaf pans. Bake at 350ยบ for 1 hour. Makes 2 loaves
