Helping husband who's scared of "healthy"

So my husband is not overweight by any means, and he's pretty young -- 28. But he has the worst eating habits ever. He never eats fruits or vegetables at all. And he lots of meat. I think his diet is 80% meat and 20% carbs. But I worry about his cholesterol and such. I don't want him to hit a situation where he is going to have a heart attack and leave me all alone! I joke with him about this and he knows what I mean and agrees, but he is so lazy about health that he doesn't really want to make "big" changes.

Here's what he's done so far: eat wheat bread instead of white, only eat red meat 2/3 days or so, and drink Naked brand fruit juice some days (when I hand it to him, he drinks it, and now sometimes he's starting to do it on his own). Any "easy" suggestions along these lines? I fully accept that I may be "doing the work for him" for a while. But once he latches onto the habit, he'll keep it. I just want him to get started in ways that are not overwhelming to his super-food-lazy self.
