Sweet Potato Recipes

I want 'em. Healthy recipes, to be more specific. None is too simple, either.

That's what I had for dinner tonight--only I didn't bother with the olive oil! Just baked the potato, touched it with very little butter and salt and pepper.

Winter soup I make contains sweet potatoes. Brown sliced carrots,and parsnips (maybe a half-cup each or a bit more?) in a little olive oil, add garlic, chicken stock, a handful of barley and a couple cups of cubed sweet potatoes, simmer until the veggies are soft and then mash slightly. If you're into it, garnish with fresh parsley and lemon rind. One of my favorite soups.

I make a foil packet chicken that I put chunks of sweet potatoes in and it cooks with all the other veggies and is wonderful. I call them yams though.

Also I saw Rachael Ray cut them in wedges and sprinkle with evoo and season and bake at 450 or 500 for about 20 min I think it was and they looked great.

Also she made them like baked potatoes but washed the skin really good. and then fluffed up the inside and put something over it I think it was cheese. It looked really good.

I fried them once in pam on a non stick skillet. Seasoned with salt and pepper. That would probably be good with onions too.
