Healthier Muffin recipies?

I always have lots of mushy bananas in the freezer because I won't eat them once they have spots, and always used to make them into banana loaf or muffins. But the recipes always have lots of sugar and either butter or oil - any healthier recipies out there? Or ways for making muffins healthier in general?

Oatmeal Muffin Recipe: ( i had 1 cup of blueberries to it)

Ingredients:
2 1/4 Cups Dry Oatmeal
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup skim milk
1/3 cup Splenda
2 large egg whites
1/2 cup Applesauce
1 teaspoon vanilla extract
cinnamon to taste

Optional additions:
blue berries (frozen or fresh)
Banana (mashed or cut into small pieces, you can use less applesauce if you add banana)
Any small diced fruit of your choosing!

1. Preheat oven to 350 degrees.

2. Spray muffin pan with non-stick cooking spray or add cupcake liners

3. In a big bowl, mix oatmeal, baking powder, salt and cinnamon

4. Add the rest of the ingredients and mix until incorporated (t resembles slightly runny oatmeal)

5. Fill each muffin 3/4 full, bake for 15-20 minutes until golden.

used stevia instaed of splenda. I used a mashed banana about 1/2 cup of blueberries, applesauce a lil extra vanilla.

My husband even liked these. I left longer than the time called for wanted them good and toasty. YUM

ENJOY!

Take your regular recipe, and substitute half to 3/4 of the butter or oil with unsweetened applesauce. Then substitute half the sugar with Splenda (or all of it with "Splenda for baking." Also, use less sugar/splenda than it calls for.

You can also substitute Egg Beaters for eggs.

could you just use bananas instead of applesauce, or would it be too dry?
