Awesome Recipe: Spicy Asian Chicken Soup

Hi everyone! This recipe comes from Self Magazine, and it is really wonderful. It would be great to give to someone who has a cold. It's really spicy, so it clears out the sinuses!

1 (48 ounce) can non fat, low sodium chicken broth
1/4 cup low sodium soy sauce
1 tbsp. brown sugar
1/4 tsp. red pepper flakes
2 tbsp. fresh lime juice
1 inch piece fresh ginger, peeled and cut in 8 slices
3/4 pound boneless chicken breasts, cut in thin 3-inch-long strips
3 tbsp. cornstarch
1 cup sliced shiitake mushrooms
1 red bell peppr, cored, seeded and sliced into thin strips
1 tsp. lime zest
2 tbsp. chopped fresh cilantro

Combine broth, soy sauce, sugar, red pepper flakes, lime juice and ginger and boil 5 minutes. Meanwhile, toss chicken with cornstarch until completely coated. Add chicken and shiitakes to broth and simmer, covered, 15 minutes. Turn off the heat and stir in red bell pepper, lime zest, and cliantro. Cover and let stand for 2-3 minutes before serving.

Makes 4 big servings
Per serving:
195 calories
1 g fat
19 g carbs
25 g protein
