Draining tofu - help!

What's the easiest/best way to drain tofu without crushing it? I'd like to be able to drain it while still keeping it firm, I don't want it to get crumbly.

I place mine in a coffee filter that I set in a wire mesh strainer and I either do this in the sink or in a square pan which I then cover and place back in the fridge. I like to start it in the morning and let it drain while I'm at work. I do this with greek yogurt too for thicker tzatziki sauce.

first i wrap the tofu in a clean dishcloth or a couple sheets paper towel. then i put the wrapped tofu on a dessert plate. i put another dessert plate on top of the wrapped tofu. i then fill my tea kettle and put that on top of the top plate. i find 15-20 minutes is enough pressing time for xtra firm.

as the above poster mentioned the strainer method, i do that with plain yogurt to make a substitute sour cream.

I drain my Tofu by snadwiching it between 2 cutting boards- large one on bottom- smaller one (bigger than the tofu block) on top. I then increase pressure by carefully puttng a few cookbooks on top of the smaller cutting board- squishing the juice out of the tofu.

Works wonders because in a mtter of minutes (usually 10-15) you can have nice firm, pressed, ready to go tofu.
