easy as pie
does anyone have any good recipes for strawberry or blueberry PIE?
? is it okay to ask such things on this site?

IMO It's fine to ask :-) Many of us allow treats now and again and I think most of us agree that "all things in moderation" makes for a healthy lifestyle.
Unfortunately I do not have a pie recipe, but strawberries and blueberries are 2 of my fave treats, so here is what I usually do with them....
Strawberry/blueberry parfaits (blackberries make a great addition as well)
1 pkg sugar-free instant Jello pudding (Lemon)
1 1/2 cups skim milk
1/2 cup lite whipped topping
2 tsp vanilla
2 generous cups of fruit (I usually use 3)
Mix the first 4 ingredients together using a hand-held mixer on med high and beat til it's as stiff as you can get it.
layer mousse/berries/mousse/berries and top with a spoonful of mouse and a garnish of a couple whole berries. I like to use a set of large goblets as dishes.
Serves 4 and I get loads of compliments on it!

check out foodnetwork.com that's where i get most of my recipe's these days and i have to say i haven't made anything from there yet that i've been disappointed with!!
look for a recipe on there by Paula Dean or Giada Di Laurentis . . .both their sweets are fantastic!!! (none of it is healthy of course . . .but if it's for a special occassion . . . .why not?!
