hot breakfast?

Hi All,

I was lovin' the smoothies over the summer as a yummy nutritious breakfast (typically I would eat banana, spinach, blueberry, soymilk and some protein powder) but now that it's winter I want something hot for breakfast and I'm not that happy w/ any of the choices I come up with. I love egg w/ spinach and salsa on a tortilla but I don't like to eat eggs everyday. I like oatmeal, but it's carb heavy and not nearly as nutritious as my smoothie. I really liked getting greens in my breakfast. Any ideas? I would prefer vegan / ETL friendly, but it's not a requirement.

a friend of mine suggest quinoa warmed with a apple or banan roasted with some cinamon and nutmeg....

there is also brown rice hot cereals in some gluten free aisles in some super markets,

could try make quinoa with some boiled apples cut up and sauted together or mashed banans..

could also make a fritata with eggwhites.. throw in all sorts of veggies

almond flour pankcakes

i have made oat and bean waffles and they are yummy.

just some ideas

Quinoa can make great oatmeal. How about almond butter and fruit?

my favorite hot breakfast is steel cut oats with fresh baked apple in it...I bake the cored apple in the microwave in a bowl for about 2 min, then scoop out the warm sweet pulp into the cooked oatmeal, yum!

Protein powder in hot cereal

When we are out for days canoeing I need protein with breakfast so I add the protein powder to my hot cereal. I use the vanilla powder and also include cinnamon and sometimes nutmeg. It isn't bad. What I really miss when we are out are veggies. I found a green powder that can be mixed with water.

I found Ancient Harvest brand organic quinoa flakes that is for making a hot cerial, and have been having it every morning. It cooks in 90 seconds on the stovetop. Box also had microwave directions. I love my oatmeal, but thought that this would be better. Taste and consistency both good.

Hot porridge

Hi, I will ditto the quinoa suggestion. I sometimes cook extra quinoa and then heat it in the microwave for breakfast with frozen berries and then top with soy milk or yoghurt.

I have recently been having buckwheat porridge. Bob's Redmill makes a nice 'creamy buckwheat' that I use.

Both quinoa and buckwheat are high in protein, so I think I you are worried about carbs, they would be better options than oats.
